Big question, 0W20 or 5W30 for my lightly moded 2020 Q60?

EIther works, and Infiniti allowed 5W30 (vs (0W20) in the 2017 Owner's Manual. For MY2018, only 0W20 was called-out, for whatever reason.

I've been using Valvoline 5W30 Modern Engine Oil in my Q with the Nissan-branded OEM filter since 5k miles. It now has almost 32k miles on it, and I stick to 5k mile OCIs.

And yes, I have a few mods...

Unlike VW 508, which Audi spec's as a 0W20 with a dye, Infiniti has no such requirement (for a dye), so I'd be impressed if a dealership could tell the difference.

In reality, in almost all instances, aside from our Canadian friends in the northern part of their provinces, a 5W will be as good as 0W oil for pumpability, down to -35 deg F. Living in the PNW, and that my Q sees occasional track use, having the 30W for higher temp protection, especially in the center bearing of the turbos, is why I use 5W30 vs 0W20.
